What You Need: |

10 oz flour
3 pound apples
1 level teaspoon salt
¼ pound seedless raisins
1 egg, beaten
3 oz chopped almonds
A little melted butter
Grated rind of ½ a lemon
Fine breadcrumbs
8 oz sugar

How To Cook: |

|
1. Put the flour on a board and make a hollow in the center. Mix salt, egg, ¼ pint water and 1 tablespoon melted butter, and pour carefully into the flour. Gradually work in the flour to form sticky dough, and then knead lightly on a well-floured board, keeping hands floured.

2. Stretch the dough out, re-knead and leave to "rest" for ½ hour, with a warm dish over the top. Cover a table with an old table-cloth, and sprinkle well with flour. Place the dough in the center and roll it slightly, then pull it out, using the backs of the hands, with thumbs tucked in.

3. Pull until the dough is paper thin-when one part becomes transparent, leave it and start on another area. Any thick pieces left around the edges should be trimmed off. Sprinkle half the pastry lightly with fine breadcrumbs.

4. Combine the thinly sliced apples, chopped raisins and remaining ingredients, and cover the dough with this mixture to within an inch of the edge. Roll up like a Swiss roll and pinch together at the edges.

5. Place on a baking sheet, brush with melted butter, bake for ½ hour in a moderately hot oven (400°F), and reduce to moderate (350°F) for a further ½ hour; baste occasionally. Serve hot or cold, sprinkled with icing sugar.
