	| 5 oz sour milk cheese
		5 oz sugar
		5 oz butter or margarine
		5 eggs
		Juice and grated rind of 1 lemon
		5 oz ground almonds, walnuts or hazelnuts
		1 oz flour |  |  |  |  |

									| How To Cook: |  |  |  |  |  | 1. Cream together the cheese, butter, nuts, sugar, egg yolks, lemon juice and grated rind. 
 
 |  | 2. Carefully fold in the stiffly beaten egg whites and the flour. 
 
 |  | 3. Pour the mixture into a greased and lined 8-inch baking tin, and bake for ¼ hour in a hot oven (450°F), then for a further ½ hour in a moderate oven (350°F), until the mixture is dry inside when tested with a skewer.
