Cucumber Pickle
(Kimchee)
This and similar pickles made of raw vegetables are served at practically all meals; they are a good source of vitamins.

What You Need:
  • 3 large cucumbers
  • ˝ teaspoon chopped red chilli pepper
  • 1˝ tablespoons salt
  • 1 spring onion
  • ˝ cup water
  • ˝ clove of garlic

  • How To Cook:
    1. Wash the cucumbers and cut into 1˝-inch lengths without peeling; cut each piece in half lengthwise and remove the seeds.

    2. Add 1 tablespoon salt to the cucumbers, mix well and leave to stand for 15 minutes.

    3. Cut the onion (including the top) into 1˝-inch lengths and shred each piece lengthwise very finely.

    4. Chop the garlic and red chilli pepper into fine pieces.

    5. Wash the salt from the cucumbers.

    6. Add the onion, garlic, red pepper, ˝ tablespoon salt and water, mix well and leave to mature.

    7. In warm weather 2 days are sufficient, but in cold weather a week is required.

    To Serve: 2 - 4
