Date Tart
What You Need:
  • Shortcrust pastry
  • 2 oz ground almonds
  • ¼ pound fat juicy dates
  • 2 tablespoons corn flour
  • A little rum or cognac
  • 4 oz caster sugar
  • 5 egg whites
  • Icing sugar

  • How To Cook:
    1. Line a shallow baking tin with the pastry.

    2. Stone the dates, cut them lengthwise into 4 pieces, place them in a soup plate, pour the rum or cognac over and leave them to soak as long as possible.

    3. Beat the egg whites to a stiff froth and add the almonds, corn flour and sugar and lastly the drained dates.

    4. Fill the uncooked pastry shell with this mixture and bake in a moderate oven (350°F) for 35-40 minutes, taking care not to allow the filling to become too brown.

    5. Just before serving, sprinkle with icing sugar, and leave in the oven for a moment or two longer.

    6. Serve hot or cold.
