What You Need: |

2 celery hearts
4 apples
1 pound cooked potatoes
FOR THE MAYONNAISE
1 clove of garlic, finely chopped
Pepper and salt
Oil
1 egg yolk
Lemon juice

How To Cook: |
|
|
1. Remove the outer stalks of the celery, leaving the crisp hearts; wash, and leave in cold water until required.
|
2. Slice the potatoes. Peel and slice the apples.
|
3. Put the chopped garlic in a mortar and pound well.
|
4. Add the egg yolk and seasoning, and stir in the oil, a few drops at a time, until the mixture is thick, then stir in a little lemon juice to taste.
|
5. Cut up the celery and toss this with the apples and potatoes in the mayonnaise.
|
6. Serve with cold meats.
