Fresh Cod With Red Pepper Sauce
What You Need:
  • 2 pound fresh cod fillet
  • 2 red peppers
  • 1 clove of garlic
  • ½ pint fish stock or water
  • ¼ pint olive oil
  • 1 tablespoon vinegar
  • Salt
  • Chopped parsley

  • How To Cook:
    1. Skin the cod fillet and cut into 4 pieces.

    2. Halve the peppers, scoop out the seeds and cook the cases in boiling salted water for 5 minutes, then drain, and chop them finely.

    3. Skin and chop the garlic.

    4. Mix together the red peppers and garlic and crush them well, using the back of a wooden spoon.

    5. Choose a pan of suitable size to cook the fish and put into it the pepper and garlic mixture, the liquid, oil, vinegar and salt to taste.

    6. Bring this liquid to simmering point, add the fish, cover and cook very gently until the fish is tender.

    7. Drain the fish and keep hot in the serving dish.

    8. Boil the liquid briskly until it is reduced by half and pour over the fish.

    9. Sprinkle with chopped parsley and serve at once.
