Guadalajara "Drunken Sponge"
(Bizcocho Borracho De Guadalajara)
What You Need:
  • Sponge cake
  • 6 oz icing sugar
  • 4 tablespoons sugar
  • ½ pint cream
  • 4 tablespoons water
  • Fresh strawberries
  • ¼ pint brandy or rum

  • How To Cook:
    1. Bake a sponge-cake mixture in a ring-shaped tin and cool on a wire tray.

    2. Prepare syrup by dissolving the sugar in the water, bringing to the boil and boiling for 5 minutes.

    3. Place the sponge on a dish and pour on the hot syrup, then sprinkle with the brandy.

    4. Mix the icing sugar with a few drops of hot water to a coating consistency and ice the top of the ring.

    5. Whip the cream, add a little sugar and pile in the center.

    6. Decorate with strawberries.
