Streusel Cake
What You Need:
  • 8 oz plain flour
  • 2 oz fine semolina
  • 2 oz sugar
  • 3 oz butter
  • 1 oz baker's yeast
  • ˝ an orange
  • 2 eggs
  • 5 tablespoons milk
  • 3-4 oz cleaned currants
  • Raspberry jam

    STREUSEL TOPPING
  • 1˝ oz butter
  • 2 oz brown sugar
  • 1˝ oz flour
  • Pinch of cinnamon

  • How To Cook:
    1. Sift together the flour, semolina and sugar. Rub in the fat and then the yeast.

    2. Add the beaten eggs and milk. Mix to give soft dough. Squeeze the orange.

    3. Remove the pith from the peel, mince the rest and add with currants to the dough.

    4. Spread evenly in a greased shallow baking tin approximately 8˝ inches by 5˝ inches.

    5. Cover with a layer of raspberry jam. Put to rise, until double the size, in a warm place.

    6. Cover with Streusel topping. Bake at 400°F, for about 30-40 minutes. Turn out and cool on a wire tray.

    FOR THE STREUSEL TOPPING:
    1. Rub together butter, flour, sugar and cinnamon, and sprinkle the topping evenly over the surface.
