Tyrolean Dumplings
What You Need:
  • 6 slices of day-old white bread
  • ˝ pint milk
  • ˝ pound diced ham
  • 2 oz bacon fat
  • Flour as needed
  • 2 eggs
  • Salt and pepper

  • How To Cook:
    1. Cube the bread and fry in the bacon fat.

    2. Mix the eggs and milk, salt and pepper and pour over the bread cubes.

    3. Leave for 20 minutes and then add diced ham.

    4. Stir in enough flour to make workable dough, form into balls and poach in boiling salted water for 10 minutes.

    5. These dumplings may also be cooked in soup and served with the soup or with a plain lettuce salad.
