1. Separate the eggs, put the yolks and sugar into a basin over hot water and beat until creamy.

2. Fold the ground almonds into the mixture, and add the orange juice.
|
3. Beat the egg whites stiffly and fold in, sprinkling in the breadcrumbs at the same time.
|
4. Bake in a shallow lined and greased cake tin for ½ - ¾ hour in a moderate oven (350°F).
|
5. Turn out carefully, as this cake is of a very rich, moist consistency.
