1. Rub the cut edge of a strip of lemon peel around the inside rim of anold-fashioned glass and then dip the glass into the dish of sugar sothat the sugar adheres to the inside rim.

2. Twist the 2 other strips of peel over the glass to release their oil, anddrop them and the ½ stick of cinnamon into the glass.

3. Warm the cognac in a chafing dish or in a deep spoon held over a flame.
|
4. Set a spoon in the glass to prevent the glass from cracking, pour in the warmed cognac, and set it aflame with a match.
|
5. Let it burn itself out, then add the hot coffee and serve.
