What You Need:            (To make 1 cocktail)

  • 1 whole egg
  • 1 teaspoon superfine sugar
  • 3 ounces medium sherry
  • 3 to 4 ice cubes
  • Ground nutmeg
  • A 6-ounce wine or whiskey sour glass, chilled

  • How To Cook:
    A flip-a drink in which a wine or spirit is briskly shaken with sugar and a whole egg-can be made with sherry, Madeira, Marsala, port, brandy, gin, light rum, vodka or whiskey.

    1. Combine the egg, sugar, wine (or spirit) and ice cubes in a mixing glass.

    2. Place a shaker over the mixing glass and, grasping them firmly together with both hands, shake vigorously 10 or 12 times.

    3. Remove the shaker, place a strainer over the top of the mixing glass, andpour into a 6-ounce wine or whiskey sour glass.

    4. Sprinkle the top with nutmeg.
