1 cup (8 ounces) plain unflavored yoghurt
2 tablespoons honey
1 tablespoon finely cut fresh mint leaves
1 to 2 teaspoons strained fresh lemon juice

1. Combine the yoghurt, honey and mint in a bowl and beat with a wire whisk until the mixture is smooth.
|
2. Whisk in 1 teaspoon of the lemon juice, then taste the dressing and add upto 1 teaspoon more lemon juice if desired. Cover tightly with foil orplastic wrap and refrigerate until ready to serve.

3. Yoghurt-and-honey dressing may be served with any fruit salad.
