What You Need:
(To Serve: 4 to 6)

1 bunch celery
20 Chinese dried shrimp
1 tablespoon Chinese rice wine, or pale dry sherry
1 tablespoon warm water
1 teaspoon soy sauce
½ teaspoon salt
1 tablespoon sugar
1 tablespoon white vinegar
2 teaspoons sesame-seed oil

How To Cook: |

|
1. Wash the shrimp under cold running water. In a small bowl, combine them with the wine and 1 tablespoon of warm water. Let them marinate for 30 minutes. Drain, saving the marinade.

2. Remove and discard the leaves of the celery and any stringy stalks. Cut the stalks lengthwise in two, then crosswise into 1-inch pieces.

3. In a large glass bowl, combine the reserved shrimp marinade, soy sauce, salt, sugar, vinegar and sesame-seed oil, and stir until the sugar dissolves.
|
4. Add the shrimp and celery, and toss them about until they are coated with the dressing. Chill for 1 hour before serving.
