Ojen (pronounced oh-hen) is an anise-flavored aperitif popular in Louisiana. Its name comes from the Spanish word for wormwood, ajenjo, because Ojen tastes somewhat like absinthe.

What You Need:
(To Make: 1 cocktail)

1½ ounces Ojen
3 dashes Peychaud bitters (see Glossary)
3 or 4 ice cubes
A 3-ounce wine or cocktail glass, chilled

How To Cook: |
|
|
1. Combine the Ojen, Peychaud bitters and ice cubes in a mixing glass and place a bar shaker on top.
|
2. Firmly grasp the glass and shaker together with both hands and shake vigorously 9 or 10 times.
|
3. Remove the shaker, place a strainer over the mixing glass and pour the Ojen cocktail into the chilled wine or cocktail glass. Serve at once.
