What You Need:

  • 2 large eggplants
  • 2 sliced onions
  • 2 sliced tomatoes
  • 1 cup grated cheese
  • 1½ cups water
  • 2 tablespoons oil
  • Salt, pepper and mixed herbs

  • How To Cook:
    1. Peel and slice eggplant. Sprinkle with salt and let stand for 30 minutes.

    2. Wash off salt and squeeze dry.

    3. Fry in oil, adding onions and tomatoes.

    4. Arrange in layers with cheese in a casserole dish.

    5. Add water and seasoning. Bake 45 minutes in a moderate oven.
