How To Cook: |

1. Make syrup with sugar, water and lime juice.

2. Peel and scrape the fruit, slice and simmer gently in the syrup until tender.
|
3. Fill the pre-baked crust and sprinkle with spices.
|
4. Chill and serve with cream - or coconut cream if desired.

PICE CRUST:
|
1. Combine flour, margarine and salt. Add 2 €“ 3 tablespoons cold water to make soft dough.
|
2. Roll out pastry larger than pie dish.
|
3. Cut to fit lapping over dish edge slightly.
|
4. Cut a border and press it around the dampened edges of dish.
|
5. Bake for ½ hour In 350°F oven. Allow to cool before filling.
