What You Need:

3 pounds cow's foot, sliced
6 cups water
2 cloves garlic, chopped
6 whole cloves
6 whole pimento (allspice) berries
1 tablespoon salt
1 tablespoon black pepper
2 medium onions, chopped
2 springs fresh thyme, chopped
2 stalks scallion, chopped
½ teaspoon Worcestershire sauce
3 tablespoon olive oil
2 tablespoon soy sauce
1 teaspoon onion powder
1 tablespoon black pepper
½ teaspoon ketchup
1 teaspoon jerk sauce
3 springs fresh thyme, chopped

How To Cook: |
|
|
1. Wash cow's foot and, with a stiff brush, remove any hairs or rough spots.
|
2. In a large saucepan over medium heat, combine cow's foot, water, garlic, cloves, allspice, salt, and pepper.
|
3. Cover and let simmer for 1½ hours until cow's foot is tender.
|
4. Add all remaining ingredients.
|
5. Lower heat, cover and let simmer another 15 minutes.
