½ pound Scotch Bonnet Peppers (may be adjusted as desired)
1 small onion, chopped
3 stalks scallion, chopped
3 sprigs fresh thyme, chopped
3 tbls. salt
2 tbls. black pepper
2 tbls. whole pimento (allspice) berries
1½ tbls. ground ginger
1 teaspoon nutmeg, freshly grated
½ cup white vinegar
¼ cup soy sauce
