What You Need:

4 tablespoons butter, plus 1 stick (¼ pound) butter, melted, for brushing
1 cup chopped onion
1 pound chicken livers, coarsely chopped
½ cup grated kefalotiri or Parmesan cheese
1/8 teaspoon grated nutmeg
2 tablespoons cognac
Salt and pepper
½ pound phyllo pastry

How To Cook: |
|
|
1. Preheat oven to 375°.
|
2. Melt 4 tablespoons butter, add onion and saute until soft, about 5 minutes.
|
3. Add chicken livers and continue cooking until they are browned. Remove from heat and add cheese, nutmeg, cognac, salt, and pepper.
|
4. Prepare stuffed phyllo triangles according to directions and diagrams in "How to Work with Phyllo" (p. 312). Use 1 teaspoon filling per triangle.
|
5. Place on ungreased baking sheets and bake for 15 to 20 minutes, or until golden. Serve warm.
