What You Need:
(To Serve: 4 to 6)

1 cup yellow split peas
½ cup minced onions
1 teaspoon minced garlic
1 fresh tomato, peeled, seeded and chopped, or ½ cup crushed canned tomatoes
1 teaspoon salt
1 teaspoon dried or
1 tablespoon fresh chopped mint (optional)
1 tablespoon chopped parsley
1 tablespoon olive oil

How To Cook: |

|
1. Wash peas, cover with water, and bring to a boil; skim. Add onions, garlic, tomato, salt, and mint.
|
2. Simmer, covered, until water is absorbed (about 30 minutes). Stir occasionally.
|
3. Before serving, sprinkle with parsley and olive oil. Serve hot or cold.

NOTE:
|
1. Fava has a very thick, smooth consistency. Olive oil is dribbled over each serving to suit the individual taste.
