What You Need:
(To Make: 3 cups)

3 tablespoons minced garlic
½ teaspoon salt
¾ cup walnuts
10 slices white bread, trimmed and soaked in ½ cup cold water, then squeezed dry
1 cup olive oil
½ cup white wine vinegar
1 cup warm water

HAND METHOD:
|
1. Combine garlic, salt, and walnuts in mortar. Add moist bread and pound until well mashed.
|
2. Add olive oil and vinegar alternately, beating thoroughly after each addition.
|
3. Add warm water; blend well. If a thinner sauce is preferred, add a little more warm water.
|
4. Correct seasoning with salt to taste.

BLENDER OR FOOD PROCESSOR METHOD:
|
1. Place garlic in bowl; add salt, walnuts, and ½ cup water. Blend 1 minute.
|
2. Add moist bread, olive oil, and vinegar, alternately. Add remaining ½ cup water.
|
3. If thinner sauce is preferred, add more water. Correct seasoning with salt.

NOTE:
|
When you are finished with the preparations, be sure to clean mortar with vinegar or lemon juice, to remove the garlic smell. Serve this with fried or broiled fish, fried eggplant, squash, or boiled beets.
