Most non-Greeks associate the word halva with a very sweet sesame candy. In Greece, however, the term also applies to a popular dessert made with farina. Fast and easy to make, Greek halva is an excellent last-minute dessert for unexpected guests.

What You Need:
(To Make: 12 pieces)

1 stick (¼ pound) unsalted butter
1 cup regular uncooked farina
1/8 cup pine nuts, toasted (optional)
1 cup sugar
1 cup milk
1 cup water
Ground cinnamon for topping

1. Melt butter in a heavy skillet. Stir in farina and nuts and brown over low heat for about 15 minutes, stirring constantly.

2. While farina is browning, combine sugar, milk, and water in a saucepan. Bring to a boil and boil for 10 minutes.

3. When farina is browned, slowly stir hot syrup into it. Remove from heat, cover skillet with a dish towel to absorb steam, cover with lid, and let stand for 30 minutes.

4. Serve warm in bowls, sprinkled with cinnamon. Or spread halva onto a shallow platter to cool. Cut into diamond-shaped pieces and serve cold sprinkled with cinnamon.
