Souzoukakia are meatballs flavored with cumin and garlic and shaped like little sausages.

What You Need:
(To Make: 2 dozen meat rolls)

1 pound ground round
½ teaspoon ground cumin
¼ cup bread crumbs
1 clove garlic, minced
1 egg
Salt and pepper to taste
1 stick (¼ pound) butter
3 tablespoons fresh lemon juice
¼ cup water

How To Cook: |
|
|
1. Combine meat, cumin, breadcrumbs, garlic, egg, salt, and pepper.
|
2. Shape teaspoonfuls of the meat mixture into oval or oblong shapes (wetting your hands to facilitate handling).
|
3. Fry in butter over medium heat, turning frequently.
|
4. Combine lemon juice and water and pour over the souzukakia.

NOTE:
|
Instead of frying the souzoukakia, you can place them in a single layer in a pan and brush with olive or vegetable oil. Broil on both sides until brown. Top with lemon sauce. They can also be served over nee as an entree.
