What You Need:
(To Make: 72 rolls)

2 pounds ground chuck or ground lamb
2 tablespoons butter, plus 2 sticks (½ pound) butter, melted, for brushing phyllo
½ cup red wine
1 cup raisins or currants
½ cup pine nuts
2 teaspoons ground cinnamon
1 teaspoon grated nutmeg
1 pound phyllo pastry

How To Cook: |
|
|
1. Preheat oven to 375°.
|
2. Saute ground beef or lamb in 2 tablespoons butter over medium heat until browned.
|
3. Add wine, raisins, pine nuts, and spices; stir until liquids have been absorbed. Cool.
|
4. Prepare bourekakia according to directions and diagrams in "How work with Phyllo". Use 1 teaspoon filling for each roll.

5. Place rolls seam side down on ungreased cookie sheets. Brush tops with melted butter and bake for 30 minutes, or until golden. Serve warm.

NOTE:
|
Meat rolls may be prepared ahead of time and frozen, unbaked. When ready to use Preheat oven to 350°. Bake without prior thawing for about 45 minutes, or until golden. Serve warm.
