2 tablespoons butter or margarine
2/3 cup raw converted rice
½ cup orzo
3 cups boiling chicken stock grated kefalotiri cheese or Eggplant-Tomato Sauce

How To Cook: |
|
|
1. In a medium-sized saucepan melt butter and lightly brown rice and orzo.
|
2. Add stock, cover tightly and simmer for 20 minutes, or until all the liquid has been absorbed.
|
3. This can also be baked in a 350° oven for 30 minutes.
|
4. Serve with grated cheese and/or Eggplant-Tomato Sauce.
