What You Need:            (To Serve: 4 to 5)

  • 2 tablespoons butter or margarine
  • 2/3 cup raw converted rice
  • ½ cup orzo
  • 3 cups boiling chicken stock grated kefalotiri cheese or Eggplant-Tomato Sauce

  • How To Cook:
    1. In a medium-sized saucepan melt butter and lightly brown rice and orzo.

    2. Add stock, cover tightly and simmer for 20 minutes, or until all the liquid has been absorbed.

    3. This can also be baked in a 350° oven for 30 minutes.

    4. Serve with grated cheese and/or Eggplant-Tomato Sauce.
