What You Need:
(To Serve: 2 to 3)

1 pound Greek "sweet" sausages (see note)
6 small onions, sliced
6 green peppers, seeded and cut into 1-inch sections
1 tablespoon minced garlic
2 to 3 whole cloves
2 teaspoons dried oregano
One 8-ounce can tomato sauce
1/3 cup white wine
½ cup water

How To Cook: |

|
1. Cut sausages into 1-inch-thick slices. In an ungreased frying pan, saute until brown. Remove and set aside.
|
2. Drain all but 3 tablespoons drippings from pan. Saute onions in drippings.
|
3. Add green pepper, garlic, cloves, and oregano. Cook until onions and peppers are wilted.
|
4. Add tomato sauce and browned sausage, wine, and water and simmer for 5 minutes. Serve hot with crusty bread.

Greek "sweet" sausage is flavored with orange or leeks. It is sold in Greek specialty shops.
