2 quarts plus ½ cup cold water
Salt to taste
1 cup raw converted rice
6 ounces tahini (¾ cup)
6 tablespoons fresh lemon juice
1 teaspoon tomato paste (optional)

How To Cook: |

|
1. Bring 2 quarts salted water to a boil, add rice, and cook, covered, for 20 minutes.
|
2. While rice is cooking, mix tahini in a bowl with ½ cup cold water. Add lemon juice and mix well.
|
3. Slowly add 1 or 2 full ladles of rice water to tahini. Remove rice from the heat and pour all the tahini mixture into it.
|
4. Add optional tomato paste, stir and serve.
