In Mexico, the enchilada is a corn tortilla that is filled with any of many choices of stuffing, covered with a hot sauce, and then baked. The following recipe is not only delicious, but is exceptionally easy to prepare.

What You Need:
(To Make: 1 enchilada)

1 softened corn tortilla
¼ cup refried beans
1 stick Monterey Jack cheese (¼ to ½ inch square)
1 strip green chili (about ½ inch wide)
1 tablespoon sour cream (or more to suit taste)
1 tablespoon canned taco or enchilada sauce (or more to suit taste)

How To Cook: |
|
|
1. Place the beans in a strip along the center of the softened tortilla. Add the green chili, cheese and sour cream.
|
2. Roll up and place seam side down on a serving plate. Pour taco or enchilada sauce over the length of the tortilla.

3. Heat in the microwave oven about 1 minute per enchilada or until the filling is hot.

SOFTENING CORN TORTILLAS:
|
1. Place the tortilla on a plate and heat in the microwave oven about 30 seconds each.
|
2. Transfer to a warm plate and keep covered until ready to use.
