8 large carrots, peeled and sliced very thin
¼ cup water
1 teaspoon sugar
1/8 teaspoon pepper
2 tablespoons butter
2 tablespoons minced cilantro or parsley
½ teaspoon salt
1 cup milk

How To Cook: |

|
1. Put the carrots, water, sugar, pepper, butter and cilantro in a covered 1½ quart casserole and cook until the carrots are tender.
|
2. In the microwave oven, this can take from 8 to 15 minutes, depending upon the age and tenderness of the carrots.
|
3. The older and more mature they are, the longer the cooking time. Stir several times during the cooking period for even cooking.
|
4. When the carrots are tender, add the salt and milk. Heat to a simmer and serve.

TIP:
|
If you can't find fresh cilantro, you can use ½ teaspoon dried cilantro. If cilantro is unavailable in your area, substitute the parsley.
