1 pound pink beans or pinto beans
2 teaspoons salt
2 tablespoons lard (or butter or margarine)
Water, as needed

1. Put the first three ingredients in a covered 3-quart casserole and add enough water to more than cover.
|
2. Cook 2 to 2½ hours in the microwave oven until the desired degree of tenderness is reached.
|
3. Every 15 minutes, stir, add more water, as needed, to keep the beans covered.
