What You Need:

3 tablespoons oil or butter
1 clove garlic, minced
1 medium-size onion, chopped
1 medium-size green pepper, chopped
1 cup mixed dried fruits, chopped (prunes, apricots, and such)
1/3 cup chopped dates
1/3 cup chopped walnuts
½ cup white wine
½ teaspoon salt
½ teaspoon cinnamon
½ teaspoon clove
½ teaspoon paprika
1½ cups cooked rice
2 eggplants or 1 duck (the stuffing tastes equally fine in a duck)

How To Cook: |

|
1. Put garlic, onion, pepper and oil in a small covered casserole.
|
2. Cook in the microwave oven until tender (about 6 minutes). Add the fruits, dates, walnuts, wine, and seasonings. Mix well and cook, covered, 4 minutes more.

3. Stir in rice. Put in the microwave oven long enough to heat rice through.
|
4. Meanwhile, cut the eggplants in half and scoop out the centers, leaving a ¾ inch wall. Fill with the rice-fruit mixture.

5. Cook, covered, in the microwave oven until the eggplant is tender (about 10 to 15 minutes more).

6. If cooking a duck: stuff with rice-fruit mixture, tie legs together. and tie wings to body. Cook breast-side down 20 minutes.

7. Drain excess fat. Cook breast-side up another 20 minutes or until duck is tender.
