2 pounds lean ground lamb
1½ cups finely-chopped onion
1 cup finely-chopped parsley
1 clove garlic, finely minced
1 egg
½ cup cracker or bread crumbs
1 teaspoon salt
1 teaspoon cinnamon
1 teaspoon paprika
½ teaspoon cayenne
¼ cup olive oil
1 eggplant
8 bamboo skewers

How To Cook: |

|
1. Put everything except the olive oil, eggplant, and skewers in a bowl and mix very well. Divide into 24 parts and form each part into a ball. Pare and cut the eggplant into 32 pieces.

2. Start each skewer by threading on first a piece of eggplant, then a meat ball, and then a piece of eggplant, continuing until 4 pieces of eggplant and 3 meat balls are on each skewer. Brush the food with the olive oil.

3. Place the skewers across a rectangular baking dish and cook until the eggplant is tender (about 12 minutes).Turn once during the cooking period.

TIP:

In microwave cooking it is very important to have uniform size pieces of food for even cooking. Cut the eggplant lengthwise into 8 even-size wedges. Cut each wedge in half so that each half is as large as the other and then cut all these pieces in half. Divide the meat into eights and then each of these into thirds.
