½ cup shortening
1½ cups sugar
2 eggs
2 cups finely-diced papaya
2 tablespoons water
1 teaspoon lemon or lime juice
3 cups flour
2 teaspoons soda
1 teaspoon salt
1 teaspoon cinnamon
¼ teaspoon ginger
½ teaspoon nutmeg
1 cup raisins

1. Cream the shortening and sugar until light and fluffy. Beat in the eggs, one at a time. Add the papaya and beat well.
|
2. Add the water and lemon juice. Sift the dry ingredients together, add them a long with the raisins, and stir well.
|
3. Pour into a wax-paper lined loaf dish. Cook until done (about 10 minutes).
|
4. Cool 5 minutes and turn out on a cooling rack, but keep loosely covered with a piece of wax paper until the cake is cool.
