What You Need:

1/3 cup olive oil
2 pounds fresh spinach
½ cup chopped onion
Salt and pepper to taste
1 tablespoon chopped parsley
1 cup raw rice
1 tablespoon tomato paste
Water (1½ to 2 cups)

1. Wash, drain, and coarsely chop the spinach. Put the olive oil, onion, parsley, spinach, salt, and pepper into a large casserole.

2. Cook, covered, in the microwave oven 5 minutes. The spinach will cook down considerably.
|
3. Add the rice, tomato paste, and enough additional water to cook the rice. If a lot of water clings to the spinach, only 1½ cups will be needed.

4. If very little clings to the spinach, the 2 cups will be needed. Cover the casserole and return to the microwave oven.

5. Cook 15 minutes more. Let stand 5 minutes before serving.

TIP:
|
Just before adding the rice, make a nest of the spinach by putting some of it up the sides of the casserole and some on the bottom. It makes for a prettier dish. The rice is better if stirred at least once during the cooking. Take care to stir carefully; try not to disturb the layer of spinach.
