4 slices bacon
1 pound fresh green beans
½ cup water
3 tablespoon sugar
3 tablespoons vinegar
3 tablespoons cornstarch
1 tablespoon soy sauce
¼ cup chopped sweet pickle
1 green pepper, sliced

How To Cook: |

|
1. Cook the bacon on paper toweling in the microwave oven until brown and crisp (about 4 minutes).Set aside. Snap off the ends of the beans and cut into 1½ inch pieces.

2. Put in a casserole with the water and cook, covered, in the microwave oven, stirring several times, until the beans are tender (about 10 to 15 minutes).Drain and reserve the bean liquor. Set the beans aside.

3. In another covered casserole, mix the sugar, vinegar, cornstarch, soy sauce and sweet pickle. Add enough water to the bean liquor to bring the liquid up to 1½ cups.

4. Stir into the sauce mixture. Stir in the green pepper. Cook, covered, in the microwave oven, stirring several times, until the mixture comes to a boil (about 6 minutes).

5. Add the beans and crumbled bacon. Cook one minute more, covered, to heat through.

TIP:
|
Use two packages frozen green beans and cook, without added liquid in the microwave oven until they are tender (about 10 to 12minutes). Use the liquid that results as part of the liquid needed for the sauce. If using canned beans, they need only be heated, so no precooking is necessary. Just drain and use the liquor as part of the sauce liquid. After the sauce is cooked, add the beans and heat.
