1½ cups flour
6 tablespoons shortening (¼ cup plus 2 tablespoons)
½ teaspoon salt
Cold water (3 to 4 tablespoons)
2 tablespoons butter
¾ cup chopped onion
2 cups Gruyere cheese, grated
4 beaten eggs
½ teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon nutmeg
1 cup light cream (or canned evaporated milk)

How To Cook: |

|
1. Blend the flour, salt, and shortening in a bowl with a pastry blender until it resembles coarse meal. Add the water and stir lightly with a fork to form smooth dough.

2. Handle as little and as lightly as possible. Roll out on a pastry canvas or floured surface to 1/8 inch thick and fit to line a 9-inch pie dish. Flute the edge and prick the bottom and sides with a fork.

3. Cook, uncovered, in the microwave oven 4 minutes, watching carefully during the last minute so you can remove it from the oven just when brown spots appear in the crust. If you leave the crust in too long, these spots will burn inside the crust.

4. Cook the onion in the butter in the microwave oven in a small covered dish for 3 minutes. Add to the grated cheese and spread the mixture evenly in the pie shell.

5. Mix the beaten egg, salt, pepper, and nutmeg. Heat the cream or milk in a 2-cup measure in the microwave oven to the scald stage (just short of boiling).Gradually beat in the egg mixture.

6. Gently pour over the onion-cheese mixture in the pie shell, being careful not to disturb it. Cook, uncovered, 7 minutes or until almost set. Let stand 10minutesto finish cooking. Cut into wedges and serve.
