How To Cook: |

1. Cut chicken breasts in half, skin and bone. Mix the salt, pepper and flour and dredge the chicken in it. Melt the butter in an 8-inch round baking dish. Stir in the lemon juice.

2. Put the chicken in with the thick part to the outer edges of the dish. Cover with wax paper or plastic wrap and cook 5 minutes. Turn chicken over, re-cover with the wax paper, and cook 5 minutes more in the microwave oven.

3. Pour on the gin and flame it, carefully. When it has burned out, add the vermouth and chicken broth. Cover and continue cooking for 5 minutes more.

4. Turn the chicken over one more time and cover. Cook until fork tender. Remove the chicken to a serving dish. Continue cooking the sauce until it is reduced to a very small amount.

5. Stir in the cream and gin and heat thoroughly, but do not boil. Pour over the chicken.
