What You Need:

2 tablespoons olive oil
1 small onion, finely chopped
2 tomatoes, peeled, seeded, and chopped
2 tablespoons flour
1 cup beef broth or bouillon
½ cup port wine
¼ teaspoon salt
Dash of pepper

How To Cook: |

1. Put the oil and onion in a covered casserole and cook in the microwave oven for 3 minutes.
|
2. Add the tomatoes and cook 4 minutes more.
|
3. Blend in the flour and then the broth and wine.
|
4. Cook 4 minutes more in the microwave oven stirring occasionally.
|
5. Season with the salt and pepper, to taste.

TIP:
|
If you like garlic flavor, mince in a clove or two and cook with the onion.
