1 cup salted peanuts
2 tablespoons ground coriander
2 cloves garlic
1 teaspoon crushed red pepper
1 cup sliced onions
¼ cup lemon juice
2 tablespoons brown sugar
¼ cup soy sauce
½ teaspoon pepper
½ cup butter, melted
½ cup bouillon
2 pounds lean pork cut into 1-inch cubes

How To Cook: |

|
1. Put all the ingredients, except the pork, in a blender and puree. Transfer to a covered casserole and cook in the microwave oven until heated well.

2. Cool. Pour over the pork in a mixing bowl and let marinate for at least 3hours, stirring occasionally.
|
3. Put on bamboo or wooden skewers and lay across a 12-inch by 9-inch rectangular dish, so that there is space between each skewer.
|
4. Cook, uncovered, turning each skewer over once, until the pinkness is gone and the peanut coating is starting to brown nicely (about 10 minutes or so per batch).

5. If any marinade remains, heat it and use it as a sauce over the meat. Serve with rice.
