What You Need:

8 thin veal slices
¼ cup minced parsley
¼ cup minced mushrooms
1 clove garlic, minced
1 tablespoon dry white wine
Salt and pepper to taste
1/8 teaspoon nutmeg
¼ teaspoon rubbed sage
1 beaten egg
4 slices bacon
1 package dry "brown gravy" mix

How To Cook: |

|
1. Pound the veal slices very thin with a mallet. Stack them, one on top of the other, and cut them into uniform rectangular pieces.
|
2. Either grind, or chop very fine, the scraps that have been trimmed off. Mix the scraps with the parsley, mushrooms, garlic, wine, salt, pepper, nutmeg, sage, and ½ the egg. Divide the mixture into 8 parts and put on top of the 8 slices of veal.

3. Rollup the pieces of meat, starting at one narrow end and rolling toward the other. Wrap each piece with ½ of a strip of bacon. Fasten with a toothpick.

4. When all 8 rolls are prepared, brush them with the remaining beaten egg and then dust lightly with the gravy mix. Place in a 2-quart rectangular baking dish.

5. Cover lightly with wax paper and cook in the microwave oven 8 to 10 minutes, being careful to not overcook. Bacon should be crisp.
