What You Need:
(To Make: 4 cups)

6 tablespoons freshly rendered lard or oil
1 tablespoon Hungarian paprika
1 teaspoon salt, or more to taste
½ tablespoon sugar
1½ cups peeled and sliced yellow onions
4 cups cored, seeded, and sliced Anaheim green peppers or sliced but not seeded Cubanelle peppers
1 pound ripe tomatoes, diced

How To Cook: |

|
1. Heat a large frying pan and add the lard or oil. Add the paprika and salt and cook for a moment or two.
|
2. Add the remaining ingredients, cover, and simmer until all is tender, about 15 minutes.
|
3. Taste to see if you need additional salt.
|
4. This sauce can be served as a side dish as it is, but it's great if you use it with Hungarian Sausage.
