1 green bell pepper
1 red bell pepper
1 red onion, peeled and sliced
3 firm tomatoes
2 tablespoons chopped parsley
Salt and freshly ground black pepper
¼ cup red wine vinegar
½ cup virgin olive oil
Pinch of sugar

How To Cook: |

1. Core, seed, and slice the peppers.
|
2. Chop the tomatoes into a large dice.
|
3. Mix together all the cut-up peppers and tomatoes with the remaining ingredients and let stand 1 hour.

4. Serve at room temperature.
