What You Need:

1 pound dried white beans, rinsed and drained
1¾ pounds smoked pork hocks, cut in 1-inch pieces
2 medium yellow onions, peeled and chopped
2- 3 garlic cloves, peeled and crushed
3 tablespoons freshly rendered lard or olive oil
2 tablespoons Hungarian paprika
1 teaspoon crushed hot red pepper flakes (optional)

How To Cook: |

|
1. Put the beans in a heavy casserole and cover with water. Bring to a boil; boil for 2 minutes.
|
2. Remove from the heat and let stand, covered, for 1 hour. Add the smoked pork and cook slowly, covered, for 1 hour.
|
3. Meanwhile, saute the onions and garlic in hot lard or oil until tender. Stir in the paprika and cook for 1 minute.
|
4. Add the mixture to the beans and pork; continue to cook until the beans are tender, about 40 minutes.
|
5. If desired, sprinkle with hot red pepper flakes. Salt and pepper to taste. The final dish should have a very thick sauce.
