What You Need:

  • 3 conchs
  • 1 large onion, sliced
  • 2 stalks celery, chopped
  • 1 sweet pepper, diced
  • Pepper to taste
  • 2 teaspoons thyme
  • 3 ripe tomatoes, chopped
  • 3 tablespoons cooking oil
  • 2 tablespoons salt
  • 5 cups water
  • 4 cups uncooked rice

  • How To Cook:
    1. Bruise and clean conch. Boil in unsalted water until tender.

    2. Remove conch from water, cut into bite-sized pieces and set aside.

    3. Saute onion, celery and sweet pepper in cooking oil until soft but not brown.

    4. Stir in tomatoes, conch and thyme and simmer for 5 minutes.

    5. Add water and season with salt and pepper. Bring to a boil.

    6. Add rice and cook over low flame until dry, stirring occasionally.
