1. Prepare conch for cooking in usual way, removing all red ports.

2. Beat thoroughly with steak tenderizer until sinews are shredded.
|
3. Beat egg and dip conch into egg.
|
4. Roll in cracker meal. Fry until golden.
|
5. Serve with lime, hot sauce and chips. One large conch yields one serving.
