What You Need:

  • 2 -3 crawfish tails
  • 3 hard cooked eggs, chopped
  • ½ cup celery, finely chopped
  • ¼ teaspoon salt
  • ¼ cup onions, finely chopped
  • Juice of 1 or 2 limes
  • 3 tablespoons mayonnaise
  • Hot pepper

  • How To Cook:
    1. Cut up crawfish into small pieces and marinate in lime juice for ½ hour.

    2. Add remaining ingredients and toss lightly.

    3. Chill in refrigerator and serve garnished with crisp lettuce and tomato slices.
