What You Need:

  • 1 tablespoon shortening or oil
  • 1 small onion, chopped
  • 1 small sweet pepper, cut up
  • Salt and pepper to taste
  • 3 tablespoons tomato paste
  • ¼ medium size pumpkin peeled
  • 2 cups long grain, rice, uncooked

  • How To Cook:
    1. Place oil in cooking pot over medium heat.

    2. Add onion and sweet pepper and cook to soften, stirring constantly.

    3. Add tomato paste and stir to blend; add cubed pumpkin and four cups water. Season to taste.

    4. Add rice and cook at low heat until water is absorbed and rice tender. Correct seasoning.

    5. Add more water if needed.
