What You Need:
(To Serve: 6 - 8)

4½ to 5 pounds pork roast
1 "loaf" bread, grated
1 medium onion, chopped
2 tablespoons tomato paste or tomato sauce
¾ cup (6 ounces) butter or margarine, melted
¼ teaspoon thyme
1 teaspoon parsley, chopped
Sweet pepper, chopped, may be added as desired
Salt and pepper to taste

How To Cook: |
|
|
1. Place pork in cooking pot and cover with water. Bring to boil; reduce heat to simmer and cook for about 3 hours or until almost done.
|
2. Remove meat from pot and cut several deep gashes in top of meat.
|
3. Mix together the remaining ingredients to use for stuffing. Place 1/3 of the stuffing in the bottom of a baking pan; place the meat on top of this.
|
4. Spread 1/3 of the stuffing in the deep gashes and the remainder over the top. Dot stuffing with additional butter or margarine.
|
5. Bake in a 350°F preheated oven for about 30 minutes or until brown.
