	| 2 pounds stewing turtle
		1 large onion, sliced
		½ sweet pepper, sliced
		2 tablespoons flour
		1 tablespoon tomato paste
		½ pound salt pork
		1 stalk celery, chopped
		3 tablespoons cooking oil
		1 ripe tomato, diced
		Salt to taste |  |

											| How To Cook: |  
											|  |  
											|  |  | 1. Scald calopy and fin of turtle. Remove outside skin. 
 
 |  | 2. Boil turtle with salt pork, onion, celery, sweet pepper and salt until meat is done. 
 
 |  | 3. Pour cooking oil into frying pan, add flour and allow to brown. 
 
 |  | 4. Add tomato paste and continue to steam down. 
 
 |  | 5. Add cooked turtle and the broth. Season to taste. Boil for 10 minutes longer. 
 
 |  | 6. Add peeled and cut up vegetables if desired.
